Ingredients for Bean And Tomato Soup Recipe

  • One quart of beans
  • Half pound of chopped-fat salt pork
  • 2 sliced onions
  • Bay leaf
  • 1 quart canned tomatoes
  • 2 teaspoons granulated sugar
  • 1 tablespoon flour
  • 1 tablespoon butter

Instructions

  1. Soak beans for eight hours.
  2. Drain and soak in warm water for another hour.
  3. Drain again and put into a large pot with a gallon of cold water; bring to a boil slowly.
  4. Add salt pork, onions, and bay leaf.
  5. Simmer gently for four hours.
  6. Then press the soup through a sieve.
  7. Put the tomatoes and soup in the pot and sweeten with sugar.
  8. Boil for half an hour and strain the soup through a colander. Return to heat.
  9. Thicken it with a tablespoon of flour rubbed into the same quantity of butter.
  10. Return briefly to a boil, then serve.
