Ingredients for Barley Water Recipe 1

  • 1/4 cup pearl barley
  • 2 quarts cold water
  • Salt

Instructions

  1. Rinse the barley and let it soak in cold water for at least one hour.
  2. Bring the water and barley to a boil.
  3. Slowly simmer until it is reduced to one pint of liquid.
  4. Strain off the broth.
  5. Season with salt, reheat, and serve plain or seasoned with a little cream.
  6. 1/4 cup raisins or diced figs may be cooked with the barley if desired, or a little lemon rind and sugar may be used in the broth.
