Baked Beans Recipe 2

Instructions

  1. Soak one quart of beans over night in water to cover.
  2. In the morning cover with water to which one-half teaspoon of soda has been added.
  3. Boil slowly until the skins begin to burst and strain off the water.
  4. Place in a bean crock and cover the beans with liquid composed of two cups of hot water, one- quarter cup of molasses, one-half teaspoon of mustard and one-half teaspoon of salt, adding more hot water if necessary.
  5. Half bury one-half pound of salt pork in the top of the beans and bake for eight or nine hours.
