Ingredients for Aerated Oatmeal Gems Recipe

  • 1 1/2 cups milk
  • 1/2 teaspoon salt
  • 2 tablespoons melted vegetable fat or butter
  • 1 tablespoon sugar
  • 1 1/3 cups rolled oats
  • 1/2 cup entire wheat or Graham flour

Instructions

  1. Put sugar, milk, salt, and fat into a bowl and mix well.
  2. Add rolled oats and flour.
  3. Mix to a smooth batter and set in a cold place overnight.
  4. Beat a few times with a spoon then drop the batter into hot, oiled iron gem pans and bake in a medium oven to a nice brown.

NOTE: Only iron gem pans should be used for aerated breads since the expansion of the batter is caused by the contrast between the hot irons and the cold batter.
