Ingredients for Walnut Cakes Recipe

  • 1 cup sugar
  • ½ cup vegetable shortening
  • 1 cup milk or water
  • ½ teaspoon salt
  • 2 cups flour
  • 2 teaspoons baking powder
  • 1 whole egg and 2 egg yolks
  • 1 cup chopped walnut meats
  • 1 teaspoon vanilla extract

Frosting

  • 1 cup sugar
  • 1 cup water
  • 2 egg whites
  • Pinch cream of tartar
  • 1 teaspoon lemon juice
  • 1 teaspoon vanilla extract


Instructions

  1. Cream vegetable shortening and sugar thoroughly together, add eggs well beaten, salt, vanilla, milk or water, baking powder, flour, and nuts.
  2. Mix well and divide into vegetable shorteninged and floured gem pans and bake ten minutes in moderate oven.
  3. When cool cover with boiled frosting.
  4. Sufficient for 15 cakes.

Frosting:

  1. Dissolve sugar and water over fire in a saucepan, add cream of tartar and boil until it forms a soft ball when tried in cold wateror 240 degree Fahrenheit.
  2. Pour on to the beaten whites of eggs, pouring in a steady stream and very slowly, adding, while beating, lemon juice, and vanilla; beat until thick, and use.
