Ingredients for Vegetable Soup Recipe 6

  • 1/3 cup carrot
  • 1 quart water
  • 1/3 cup turnip
  • 5 tablespoons butter
  • ½ cup celery
  • ½ tablespoon finely
  • 1½ cups potato
  • Chopped parsley
  • ½ onion
  • Salt and pepper

Instructions

  1. Wash and scrape a small carrot and cut into thin slices.
  2. Wash and pare half a turnip and cut and slice same as carrot.
  3. Wash, pare, and cut potatoes in small pieces.
  4. Wash and scrape celery and cut in quarter-inch pieces.
  5. Cut onion in thin slices.
  6. Mix vegetables (except potatoes), and cook ten minutes, in four tablespoons butter, stirring constantly.
  7. Add potatoes, cover, and cook two minutes.
  8. Add water and boil one hour or until vegetables are soft.
  9. Add remaining butter and parsley.
  10. Season with salt and pepper.
