Ingredients for Veal Rack With Brussels Sprouts And Onions

  • 1 rack of veal
  • 2 pounds Brussels sprouts, washed, cleaned
  • 6 onions, peeled, quartered
  • Seasonings to taste

Instructions

  1. Put the rack of veal, onions and seasonings in a roasting pan and roast in moderate oven for about 45 minutes.
  2. In the meantime, boil the Brussels sprouts in salted water for about 20 minutes.
  3. Drain off water.
  4. Let stand for about 20 minutes.
  5. Then add the Brussels sprouts to the veal and finish cooking together about 10 minutes.
  6. The Brussels sprouts will be impregnated with the juice from the onion and the veal.
