  • 3 pounds veal rack, in 1 piece
  • 8 sweet potatoes, peeled
  • 4 tomatoes, washed
  • 3 tablespoons butter
  • 1/2 cup water
  • Seasonings to taste

  1. Put all ingredients in a roasting pan and stir together.
  2. Bake at 350 degrees for 50 minutes.
