Ingredients for Veal Rack With Brussels Sprouts And Onions
- 1 rack of veal
- 2 pounds Brussels sprouts, washed, cleaned
- 6 onions, peeled, quartered
- Seasonings to taste

Instructions
- Put the rack of veal, onions and seasonings in a roasting pan and roast in moderate oven for about 45 minutes.
- In the meantime, boil the Brussels sprouts in salted water for about 20 minutes.
- Drain off water.
- Let stand for about 20 minutes.
- Then add the Brussels sprouts to the veal and finish cooking together about 10 minutes.
- The Brussels sprouts will be impregnated with the juice from the onion and the veal.
