Instructions

  1. One ounce of chocolate.
  2. Two tablespoons of sugar.
  3. One-half cup of boiling water.
  4. One cup and one-half of hot milk (or part milk and part water).
  5. Melt the chocolate in a small saucepan set over the teakettle; add the sugar and half-cup of water, and cook and stir directly over the fire until smooth and glossy; continue cooking, stirring occasionally, about six minutes, then stir into the milk, scalded over hot water; beat with an egg beater about five minutes, and the chocolate is ready to serve.
