Ingredients for Trout (brook) Stuffed With Anchovies

  • 4 brook trout
  • ½ cup anchovies, chopped
  • 1 cup bread crumbs
  • 4 tablespoons butter
  • ½ cup water
  • Seasonings to taste

Instructions

  1. Cut open the trout on the under side.
  2. Mix anchovies with the butter, and with a fork work into the mixture the bread crumbs.
  3. Stuff trout with the bread crumb mixture.
  4. Press each trout into original shape.
  5. Put trout in a baking pan.
  6. Season, add the water, and bake in moderate oven for about 15 to 20 minutes.
  7. Then serve.
