Ingredients for Tripe With Potatoes And Parsley
- 1½ quarts water
- 2½ pounds honeycomb tripe, cut in strips
- 2 onions, peeled, sliced
- 6 potatoes, peeled, sliced
- 1 cup parsley, chopped
- 2 tablespoons butter
- Seasonings to taste

Instructions
- Put in a kettle together the water, tripe, onions, butter and seasonings.
- Cover.
- Let boil slowly for about 1 1/4 hours.
- Add the potatoes and the parsley.
- Cover again and let cook for about 20 minutes.
- Then serve.
