Ingredients for Tomato Sauce

  • 1 pint tomatoes, canned or fresh
  • 1 small onion, cut fine
  • 1 small carrot, sliced
  • 2 tablespoons oil
  • ¼ cup flour
  • ½ clove garlic, if desired
  • ½ bay leaf, if desired
  • 1 teaspoon salt
  • ½ teaspoon thyme

Instructions

  1. Simmer the onion, carrot, tomato, garlic, bay leaf, and oil together for ten minutes.
  2. Stir in the flour, which has been stirred smooth with a little cold water.
  3. Rub through a fine strainer.
  4. Add the salt and thyme, and water to thin if too thick.
