Ingredients for Tomato Okra With Rice

  • ¼ cup rice
  • 2 cups sliced okra pods
  • 3 tablespoons diced onion
  • 2 stalks celery
  • ½ sweet bell pepper
  • 1-½ tablespoons vegetable butter
  • 3 cups stewed tomato
  • 5 cups water
  • Salt to taste

Instructions

  1. Brown the rice to a light golden brown in a frying pan over the open fire, add the water, and bring to a boil.
  2. Cut the celery and the bell pepper into small dice, and put into a saucepan, with the onion and the butter, and let simmer for 10 minutes, stirring often, but do not brown.
  3. Add the tomato, boil up, and pour into the boiling rice.
  4. Salt to taste, and when the rice is tender, add the sliced okra pods.
  5. Let boil until well done, add chopped parsley and serve.
