Ingredients for Tomato Okra With Rice
- ¼ cup rice
- 2 cups sliced okra pods
- 3 tablespoons diced onion
- 2 stalks celery
- ½ sweet bell pepper
- 1-½ tablespoons vegetable butter
- 3 cups stewed tomato
- 5 cups water
- Salt to taste

Instructions
- Brown the rice to a light golden brown in a frying pan over the open fire, add the water, and bring to a boil.
- Cut the celery and the bell pepper into small dice, and put into a saucepan, with the onion and the butter, and let simmer for 10 minutes, stirring often, but do not brown.
- Add the tomato, boil up, and pour into the boiling rice.
- Salt to taste, and when the rice is tender, add the sliced okra pods.
- Let boil until well done, add chopped parsley and serve.
