Ingredients for Tomato Cream Soup--no. 1 Recipe

  • 12 ripe tomatoes
  • 3 teaspoons of corn starch
  • 1 teaspoon of butter
  • 1 quart of scalding milk
  • Pinch of soda
  • Season with salt, pepper, and sugar

Instructions

  1. Cut up tomatoes and place in a saucepan. Stew until tender.
  2. Rub through a strainer.
  3. Thicken with corn starch that has been rubbed to a paste with a teaspoon of butter.
  4. Pour scalding milk in slowly, in which a pinch of soda has been dissolved.
  5. Season with salt, pepper, and sugar.
