Ingredients for Chicken With Polenta Recipe
- Small chicken
- 1 tablespoon butter or shortening
- 1/2 onion, chopped finely
- 1 carrot, cleaned and chopped
- 1 stalk celery, chopped
- Salt and pepper to taste
- 1 pinch allspice
- 1/3 glass wine, red or white
- 1 cup tomato sauce
- Rice or Indian meal for serving

Instructions
- Melt butter in a saucepan and add chopped onions, carrots, and celery.
- Then put in the chicken, the salt, pepper, and a pinch of allspice, and cover the saucepan.
- Cook, basting with the grease, and turning the chicken, until it is brown on all sides; then add one-third of a glass of red or white wine.
- When the wine has become absorbed, add the tomato sauce.
- Cook for a few moments more--until the chicken is thoroughly cooked.
- Put chicken in the center of a serving platter. Heap prepared rice or Indian meal around the chicken.
