Ingredients for Chicken With Polenta Recipe

  • Small chicken
  • 1 tablespoon butter or shortening
  • 1/2 onion, chopped finely
  • 1 carrot, cleaned and chopped
  • 1 stalk celery, chopped
  • Salt and pepper to taste
  • 1 pinch allspice
  • 1/3 glass wine, red or white
  • 1 cup tomato sauce
  • Rice or Indian meal for serving

Instructions

  1. Melt butter in a saucepan and add chopped onions, carrots, and celery.
  2. Then put in the chicken, the salt, pepper, and a pinch of allspice, and cover the saucepan.
  3. Cook, basting with the grease, and turning the chicken, until it is brown on all sides; then add one-third of a glass of red or white wine.
  4. When the wine has become absorbed, add the tomato sauce.
  5. Cook for a few moments more--until the chicken is thoroughly cooked.
  6. Put chicken in the center of a serving platter. Heap prepared rice or Indian meal around the chicken.
