Ingredients for Tomato And Bean Soup Recipe

  • 3 pints of cold water
  • Beef-bones
  • 1 half-sliced carrot
  • 2 stalks of celery
  • 1 grated onion
  • 1 teaspoon of butter rubbed in 1 tablespoon of flour
  • Salt and pepper to taste
  • 1 cup stewed tomatos
  • 1 cup baked beans

Instructions

  1. Pour cold water over beef-bones and place on the heat.
  2. Add carrot, celery, and a grated onion.
  3. Simmer slowly for four hours in a covered pot, until the liquid is reduced to one-half.
  4. Turn all into a bowl and let it stand until it becomes cold.
  5. Skim the fat off, take out the bones, and rub the vegetables through a colander back into the liquor.
  6. Season to taste with salt and pepper.
  7. When it begins to boil, add the stewed tomatos and baked beans.
  8. After cooking half an hour, rub all hard through the colander into another saucepan.
  9. Thicken with the butter rubbed with flour.
  10. Boil hard for a moment and turn upon small squares of fried or toasted bread laid in the bottom of the tureen.
