Ingredients for Tomato Omelet Recipe

  • 2 or 3 tomatoes
  • 4 eggs
  • Dash of salt and pepper
  • 2 teaspoons butter
  • canned tomatoes
  • pinch of finely minced parsley
  • 1 teaspoon each of finely minced onion and green peppers

Instructions

  1. Peel the tomatoes and cut across, remove the seeds, and cut the firm part into dice.
  2. Put them in a frying-pan with salt and pepper and a teaspoon of butter. Cook until done.
  3. Add these to a plain omelet just before folding it over.
  4. Canned tomatoes may be used in an omelet by taking out a little of the firm part.
  5. Cook this a few minutes in a small saucepan with a teaspoon of butter, a little finely minced parsley, and a teaspoon each of finely minced onion and green peppers.
  6. Pour over the omelet when it has stiffened and fold it in, or mix it with the yolks of a plain omelet and then fold in the whites of the eggs and fry at once.
