Ingredients for Tofu Cheesecake Recipe
- 1 pound plain tofu
- 8 ounces cream cheese
- 2 eggs
- 2/3 cup honey
- 2 tbsp. oil
- 1 tbsp. vanilla extract
- 1 tbsp. lemon juice
- 1 graham cracker crust
Instructions
- Preheat oven to 350 degrees.
- Using a blender, combine the tofu, cream cheese, eggs, honey, oil, vanilla, and lemon juice.
- Blend until all ingredients are smooth and incorporated. This may take a while since tofu can be thick.
- Pour into crust.
- Bake for 35 minutes.
- After the cheesecake has cooled, add fruit topping like berries if desired.
