Ingredients for Tea Cakes And Scotch Scones Recipe

  • 2 cups flour
  • 4 teaspoons baking powder
  • 2/3 cup milk
  • 1 teaspoon salt
  • 4 tablespoons shortening

Instructions

  1. Mix and sift the flour, baking powder and salt, and chop in the shortening.
  2. Add sufficient milk to make a soft dough, about two-thirds cup.
  3. Toss on floured board and roll into a sheet one-half inch in thickness.
  4. Reverse a pieplate upon the rolled dough, and with a sharp knife, cut a cake the exact size of the pieplate.
  5. With a cake turner transfer the cake to a greased baking tin and bake in a quick oven (400-425 degrees F.).
  6. White hot, split, butter and cut like a pie.
  7. Another may be made of the trimmings.
  8. Scotch Scones
  9. Make Tea Cakes mixture, but shape with a small, round cookie cutter.
  10. Bake on a griddle, turning on both sides until a delicate brown.
  11. Lay a napkin on a plate, arrange the scones on it and fold the corners of the napkin over them.
  12. Split and butter while hot.
