Tailgate Grilling Recipes

When tailgating, you need some great tailgate grilling recipes to get the game going.
Vegetables Are Good for You
I know grilling is all about the meat. After all, you are going to need a lot of protein to carry you through a day of frenzied fandom. But, let's think back to what mom always said: "Eat your Vegetables." For a fast, easy, and flavorful way to add some vegetables on your plate, you can use either of these tailgate grilling recipes.
Take:
- 2-3 zucchini
- 2-3 yellow squash
- One good sized eggplant
Slice the zucchini and squash into 1/4 inch thick slices lengthwise. Slice the eggplant into 1/4 inch thick slices crosswise so you have rounds.
Options
Option 1:
- Brush both sides of the veggies with extra virgin olive oil.
- Salt and pepper both sides.
- Sprinkle with any herb and spice mix you like. You can use an Italian mix that you buy at the supermarket or blend your own by mixing equal amounts of dried basil, oregano, thyme, and rosemary. You can also use fresh herbs that have been chopped very fine.
- Grill the veggies on one side for about two minutes, then flip them.
Option 2:
- Make a quick marinade by mixing your herb mix and salt and pepper with a 2:1 ratio of olive oil and balsamic vinegar.
- Marinade the veggies for about a half hour and then grill. You can baste them with the marinade as they grill if you like.
Asparagus Wrapped in Prosciutto
You can also make these very tasty asparagus wraps:
- 24 asparagus spears
- 12 slices Prosciutto
- Olive oil
- Pepper
- Wrap the asparagus spears with half a slice of the Prosciutto.
- Brush with oil and sprinkle with pepper.
- Grill for about 5 minutes.
For a vegetarian option or just a nice side for your protein, these are great tailgate grilling recipes.
Bring the Meat
You can use any good spice rub to grill great chicken, but if you are looking for a different way to grill chicken you can make a chicken satay.
You will need:
- 1-1 1/2 pounds chicken breasts cut into 1 inch wide strips
- 1 onion, diced
- 1 clove garlic, minced
- 1 inch fresh ginger, minced
- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- 1/2 teaspoon ground tumeric
- 1/2 teaspoon salt
- 1 teaspoon brown sugar
- 1 tablespoon soy sauce
- 3 tablespoon smooth peanut butter
- The juice of one lime
- 1 tablespoon peanut oil
- 12 soaked skewers soaked in water for 10 minutes
- Skewer the chicken on the skewers.
- Mix all the ingredients above in a blender.
- Marinate the chicken in the mixture for at least 2 hours, overnight is better.
- Grill 8 to 10 minutes, turn often.
Serve this with a nice peanut sauce. You will need:
- 1 tablespoon peanut oil
- 1 onion diced
- 2 cloves garlic, minced
- 1 teaspoon chili flakes
- 2 tablespoon soy sauce
- 1 tablespoon brown sugar
- 1 tablespoon lime juice
- 1 cup peanut butter
- 1 cup coconut milk
- In a blender, mix the peanut oil, onion, garlic, chili flakes, brown sugar, and lime juice.
- Pour it into a pan and heat it over a medium heat until the mixture becomes fragrant.
- Mix in the peanut butter and coconut milk and simmer for about ten minutes.
- It should thicken by then, but if it doesn't, continue to simmer until it is a semi-thick consistency.
Tailgate Grilling Recipes
You can grill anything when you are tailgating, but for a nice change get your veggies and a satay on the fire. .
