Taco Enchilada Casserole

Ingredients for Taco Enchilada Casserole Recipe
- 1 pound ground beef
- 1/2 cup chopped onion
- 1 clove garlic, pressed or minced
- 8 ounces tomato sauce
- 1/2 cup water
- 1 tablespoon chili powder
- 15 ounces kidney beans, undrained
- 8 ounces taco flavored tortilla chips
- 2 cups shredded lettuce
- 1 large tomato, coarsely chopped
Instructions
- Preheat oven to 350 degrees.
- Brown the beef and onion together.
- Stir in garlic, sauce, water, and seasonings.
- Bring to a boil and simmer for 5 minutes.
- In a large casserole dish, layer the chips and top with the beef and beans.
- Repeat layers until all ingredients are used.
- Bake for 40 minutes, covered.
- Top with tomatoes and lettuce.
- Sour cream, guacamole, and cheese may also be added if desired.
