Taco Enchilada Casserole

Ingredients for Taco Enchilada Casserole Recipe

  • 1 pound ground beef
  • 1/2 cup chopped onion
  • 1 clove garlic, pressed or minced
  • 8 ounces tomato sauce
  • 1/2 cup water
  • 1 tablespoon chili powder
  • 15 ounces kidney beans, undrained
  • 8 ounces taco flavored tortilla chips
  • 2 cups shredded lettuce
  • 1 large tomato, coarsely chopped

Instructions

  1. Preheat oven to 350 degrees.
  2. Brown the beef and onion together.
  3. Stir in garlic, sauce, water, and seasonings.
  4. Bring to a boil and simmer for 5 minutes.
  5. In a large casserole dish, layer the chips and top with the beef and beans.
  6. Repeat layers until all ingredients are used.
  7. Bake for 40 minutes, covered.
  8. Top with tomatoes and lettuce.
  9. Sour cream, guacamole, and cheese may also be added if desired.
