Ingredients for Supreme Of Chicken Recipe 1

  • 1 raw chicken breast, chopped finely
  • 4 eggs
  • 1-1/3 cup heavy cream
  • Salt and pepper to taste
  • Sauce

Sauce Ingredients

  • 1/4 cup butter
  • 1/4 cup flour
  • 1-1/2 cup chicken stock
  • 1/2 cup cream
  • 2 egg yolks
  • Salt and pepper to taste

Instructions

  1. Beat 4 eggs, one at a time, into chicken. Beat the mixture after each addition until smooth. Add 1-1/3 cups of thick cream and season well with salt and pepper.
  2. Turn into buttered earthen timbale molds, half surround them with hot water, cover with buttered paper and bake about 20 minutes in a 350 degree oven.
  3. Make sauce: mix 1/4 of a cup each of butter and flour, 1-1/2 cups of chicken stock, 1/2 a cup of cream, salt and pepper to season and the yolks of 2 eggs. Heat until cooked through.
  4. Pour sauce over chicken for serving.
