Ingredients for Succotash

  • 1 cup of stewed beans(preferably Lima)
  • 3 tablespoons of butter
  • ¼ teaspoon of pepper
  • 1½ cups of corn pulp
  • ¼ to½ cup of cream
  • ¾ teaspoon of salt

Instructions

  1. Succotash may be made from fresh or dried beans.
  2. In both cases the beans should first be cooked until tender, then add the corn pulp and cook about five minutes after boiling begins.
  3. Add the butter and seasonings.
  4. If there be enough liquid with the beans, the cream may be omitted.
  5. Succotash is eaten with a spoon, but it should not be at all sloppy.
