Bread Stuffing for Turkey
- Slice bread in thick, then put in the oven to dry.
- Grate with a coarse grater. To every cup of crumbs, allow a tablespoon of minced pork.
- Season with salt, pepper, and sage, and moisten very slightly with milk.

Oyster Stuffing
- Make a stuffing of bread crumbs as above.
- Season with parsley, thyme, and onion juice. Moisten with melted butter.
- Add 2 dozen small chopped oysters.

Chestnut Stuffing
- Boil 1 quart of chestnuts, shell, and peel them.
- Mash them smooth and rub into them 2 tablespoons of soft butter.
- Season with salt and white pepper.
- Stuff the turkey with this as you would with any other kind of dressing.
