Instructions
- Clean the smelts, wash and wipe dry, and fill them with a stuffing made of bread crumbs and melted butter mixed with an equal amount of tomato, and season with salt and pepper, or with half the amount of tomato catsup.
- Or add of chopped oysters the same amount as there is of bread crumbs; season with salt and pepper and a very little lemon juice.
- Sew up the opening, lay them in a buttered baking-pan, and bake ten or fifteen minutes.
- Serve with maitre d'hotel or parsley butter.
