Stuffed Smelts Recipe

Instructions

  1. Clean the smelts, wash and wipe dry, and fill them with a stuffing made of bread crumbs and melted butter mixed with an equal amount of tomato, and season with salt and pepper, or with half the amount of tomato catsup.
  2. Or add of chopped oysters the same amount as there is of bread crumbs; season with salt and pepper and a very little lemon juice.
  3. Sew up the opening, lay them in a buttered baking-pan, and bake ten or fifteen minutes.
  4. Serve with maitre d'hotel or parsley butter.
