Stuffed French Toast

Ingredients for Stuffed French Toast

  • 4 ripe bananas, sliced
  • 8 slices French bread
  • 1/2 cup milk
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon

Instructions

  1. Beat eggs; stir in cinnamon, vanilla, and milk, blending well.
  2. Make 4 banana "sandwiches": place a layer of banana slices on a piece of bread and then top with another piece of bread.
  3. Dip sandwiches in egg mixture, turning to coat both sides evenly.
  4. Heat a lightly greased skillet over medium heat.
  5. Fry each sandwich until lightly browned on each side, approximately 2 minutes per side.
  6. Transfer sandwiches to a cookie sheet and place in a 350 degree oven. Cook 8 to 10 minutes, or until golden brown.
  7. If desired, serve with maple syrup, butter, whipped cream, fresh fruit, and chocolate syrup.
