Ingredients for Stuffed Calf's Heart Recipe
- 2 calf hearts
- Cold water, enough to cover
- 1 cup cracker or bread crumbs
- 2 tablespoons butter
- Salt, pepper, and onion juice, to taste
- 1 teaspoon powdered mixed sweet herbs or a teaspoon of minced parsley and a teaspoon of kitchen bouquet
- Hot water
Instructions
- Soak hearts in cold water for fifteen minutes to draw the blood out of the veins and arteries. Remove as many of these as can be done without cutting the heart.
- Make a stuffing of the cracker or bread crumbs, butter, seasoning, onion juice, and sweet herbs. Moisten sufficiently with hot water.
- Fill cavities with the dressing and tie or skewer the opening to keep the dressing in.
- Put them in a stewing-pan with just enough hot water to cover and cook slowly for an hour or more until very tender.
- Serve either hot or cold.
