Ingredients for Stock For Consomme Recipe
- Beef shin or veal knuckle, cut into small pieces
- 1 onion
- 2 tablespoon sugar
- 6 quarts cold water
- 12 cloves stuck in an onion
- 1 bay leaf
- 1 sliced carrot
- A few celery tops or 1/2 teaspoon celery seed
- 1 teaspoon pepper

Instructions
- Put a sliced onion and sugar into the soup kettle to brown and burn. Then, put in the meat.
- When well seared, add bones and 6 quarts cold water. Cover, bring slowly to boiling point, and skim.
- Keep simmering for three hours. Then, add the onion with cloves, bay leaf, sliced carrot, celery tops, and pepper.
- Simmer for another hour; strain, and set aside to cool.
- When cold, remove every particle of fat. If well made, you will have a transparent, brown, thick jelly, all ready for use.
