Ingredients for Stock For Consomme Recipe

  • Beef shin or veal knuckle, cut into small pieces
  • 1 onion
  • 2 tablespoon sugar
  • 6 quarts cold water
  • 12 cloves stuck in an onion
  • 1 bay leaf
  • 1 sliced carrot
  • A few celery tops or 1/2 teaspoon celery seed
  • 1 teaspoon pepper

Instructions

  1. Put a sliced onion and sugar into the soup kettle to brown and burn. Then, put in the meat.
  2. When well seared, add bones and 6 quarts cold water. Cover, bring slowly to boiling point, and skim.
  3. Keep simmering for three hours. Then, add the onion with cloves, bay leaf, sliced carrot, celery tops, and pepper.
  4. Simmer for another hour; strain, and set aside to cool.
  5. When cold, remove every particle of fat. If well made, you will have a transparent, brown, thick jelly, all ready for use.
