Stewed Oysters Recipe

Instructions

  1. Drain a quart of fine oysters, and carefully remove all bits of shells.
  2. Strain the liquor, and put it in a saucepan.
  3. Bring it to a boil, and skim.
  4. Add a pint of hot milk, a tablespoon of butter, and when at the boiling point add the oysters, a little pepper, and more salt if necessary.
  5. Cook only until the oysters begin to curl.
  6. The fire should be hot enough to cook them quickly, but care must be taken that they do not scorch after the milk is added.
  7. Serve small, crisp crackers and pickled gherkins as an accompaniment.
