Ingredients for Stewed Chicken Recipe
- 1 stewing chicken
- Salt and pepper to taste
- 1 tablespoon flour
- 1 tablespoon butter, melted
- 1 tablespoon parsley, chopped
- 1 cup milk
- 1 egg, beaten lightly
Instructions
- Draw, since, and joint a stewing chicken.
- Season pieces with pepper and salt and cover with boiling water in a pot.
- Cover and stew gently until tender.
- Remove chicken.
- Drain, reserving liquid. Thicken gravy by adding 1 tablespoon flour rubbed with 1 tablespoon melted butter.
- Add salt and pepper to taste, chopped parsley and 1 cup milk.
- Pour 1/2 cup gravy over egg, beating carefully to prevent lumps; return to remainder of gravy; bring to boil and pour over chicken.
