Ingredients for Stewed Carrots, Italian Style

  • 2 cups sliced young carrots
  • 1-½ cups water
  • ¼ teaspoon salt
  • 2 teaspoons vegetable butter
  • 1 teaspoon flour

Instructions

  1. Italian Style Recipe, Add the water and the salt to the sliced carrots, and let boil gently until they are done and the liquid is reduced to 1/2 cup.
  2. Rub the butter and the flour together in a small saucepan, add a little of the broth, and stir smooth.
  3. Add the rest of the broth, and boil up.
  4. Add the cooked carrots, reheat and serve.
  5. Carrots in Cream
  6. Add rich cream, cream sauce or canned milk to either of the above for stewed carrots.
  7. Shake together, reheat and serve.
  8. Carrots with Egg Sauce
  9. Add 2 or 3 chopped or finely sliced hard-boiled eggs to the above creamed carrots.
  10. Reheat and serve.
  11. Carrots and Green Peas
  12. Use either for stewed carrots, adding an equal quantity of cooked peas.
  13. Reheat and serve.
