Ingredients for Steamed Fruit Pudding

  • 1-½ cups soaked stale bread
  • 1 cup seedless sultana raisins
  • The grated rind of½ lemon
  • 3 tablespoons sugar
  • 1 egg
  • 1 tablespoon vegetable butter

Instructions

  1. Soak the raisins overnight, drain, and put on a slow fire until hot through; then add the vegetable butter.
  2. Have the bread soaked in cold water until soft all the way through, and press out lightly.
  3. Beat the egg, and mix all the ingredients, using a silver fork.
  4. Put into a thin cloth, leaving a little room to rise, and steam for 1-1/2 to 2 hours.
  5. Turn out on an oiled pie tin, bake for a few minutes, and serve with lemon sauce.
  6. This last baking may be omitted if not convenient.
  7. If seeded raisins are used, they should be added without soaking.
