Ingredients for Steamed Brown Bread Recipe

  • 2 tablespoons corn oil
  • ¾ cup corn syrup
  • 1 cup graham meal
  • 1 cup rye meal
  • 2 cups cornmeal
  • 1-¼ teaspoons salt
  • 1 pint sour milk
  • 1 teaspoon baking soda
  • ¾ cup raisins (optional)

Instructions

  1. Pour the corn oil, corn syrup and milk in a mixing bowl.
  2. Add the soda dissolved in one tablespoon boiling water, beat in the meal, salt and raisins if used.
  3. Transfer to three one pound baking powder cans, or one large mold, oiled with corn oil and steam an hour and a half for the small molds, four hours for the large one.
  4. Serve with butter or with heated corn syrup.
