Ingredients for Squash Soup Recipe 1

  • One cup of cold boiled squash
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • pepper
  • mace
  • 1 tablespoon of onion juice
  • 2 tablespoons of celery, minced
  • 1 quart hot milk
  • pinch of baking soda
  • 2 tablespoons of butter
  • 1 tablespoon of flour

Instructions

  1. Run boiled squash run through a colander; beat into this salt, sugar, a little pepper and a pinch of mace, onion juice, and celery.
  2. Place this on the stove, stirring constantly until it becomes very hot.
  3. Have ready a quart of heated milk, with a pinch of soda.
  4. Stir butter and flour into the milk.
  5. Mix the hot squash and the milk well together in the tureen and serve.


Note: Turnip soup can be made in the same way. .
