Ingredients for Sponge Cake
- 6 eggs
- 1 cup granulated sugar
- 2 tablespoons lemon juice
- 1¼ cups flour
- ½ teaspoon salt
- 1 teaspoon baking powder

Instructions
- Beat yolks of egg with sugar and lemon juice.
- Beat the whites of egg stiff.
- Cut and fold part of the beaten whites into the mixture of yolks and sugar.
- Fold in the flour, salt and baking powder sifted together.
- Add the remainder of beaten whites and mix lightly.
- Bake in an ungreased or unbuffered sponge cake tin in moderate oven for 35 to 45 minutes.
- When sponge cake is baked, turn upside down on cake rack or wire tray.
