Sponge Cake Recipe 1

Ingredients for Sponge Cake

• 6 eggs
• 1 cup granulated sugar
• 2 tablespoons lemon juice
• 1¼ cups flour
• ½ teaspoon salt
• 1 teaspoon baking powder

Instructions

1. Beat yolks of egg with sugar and lemon juice.
2. Beat the whites of egg stiff.
3. Cut and fold part of the beaten whites into the mixture of yolks and sugar.
4. Fold in the flour, salt and baking powder sifted together.
5. Add the remainder of beaten whites and mix lightly.
6. Bake in an ungreased or unbuffered sponge cake tin in moderate oven for 35 to 45 minutes.
7. When sponge cake is baked, turn upside down on cake rack or wire tray.
