Ingredients for Spinach Pie Recipe
- 10 ounces frozen chopped spinach
- 12 ounces small curd cottage cheese
- 3/4 cup Parmesan cheese, grated
- 2 cups shredded Monterey Jack cheese
- 1 egg, lightly beaten
- 1/2 cup chopped onion
- 2 sheets thawed phyllo pastry
Instructions
- Preheat oven to 400 degrees F.
- Thaw the spinach and squeeze out excess water.
- Mix together the spinach, cheeses, egg, and onion.
- Spoon half of the spinach filling into each pastry.
- Fold the pastries closed and close the ends, rubbing with water and pinching to seal.
- Place on a lightly greased baking sheet, making cross cuts on the top.
- Bake for 30-40 minutes until golden brown.
