Spanish Tamales Recipe

Instructions

  1. The following ingredients are for two dozen tamales.
  2. Three dozen ears of green corn with the husks, one chicken, two dozen Chili peppers, one quart of olives, two pounds of raisins, two cups of good shortening.
  3. Salt to season sufficiently.
  4. Scrape the corn from the cob, mix with the chicken minced moderately fine, and add the other ingredients.
  5. Divide in two dozen small portions and tie up in the husks.
  6. Steam or boil until thoroughly done.
  7. This is a genuine Spanish-made tamale, as manufactured in southern California.
