Ingredients for Spanish Potatoes

  • 1 tablespoon minced onion
  • 2 tablespoons chopped green pepper
  • 2 tablespoons chopped pimiento
  • 4 tablespoons oil or drippings
  • 2 cups cold boiled potatoes diced
  • ½ cup cold cooked ham, chopped
  • 1 teaspoon salt
  • ½ teaspoon paprika
  • Or
  • Glazed Sweet Potatoes
  • 6 sweet potatoes
  • Salt and pepper
  • Butter
  • 1 cup brown sugar
  • ¼ cup water

Instructions

  1. Boil the potatoes without paring them, and when tender, drain and strip off the skins.
  2. Make a thick syrup of the sugar and water.
  3. Cut each potato in half, dip it in the syrup, lay in a baking dish, season each piece with salt and pepper, a bit of butter.
  4. Bake in a quick oven until the potatoes are brown.
  5. They will brown quickly.
