Ingredients for Spanish Eggs Recipe 1

  • 6 eggs
  • 2 tablespoons condensed tomato or 1/3 cup stewed tomato
  • 1 teaspoon celery salt
  • 1 tablespoon lemon juice
  • 1 small onion, grated
  • 2 dozen ripe olives
  • 1 teaspoon salt

Instructions

  1. Beat the eggs slightly. Put the tomato through a colander and add it to the beaten eggs.
  2. Add lemon juice, salt, celery salt, and grated onion.
  3. Cut the olives and add them to the mixture.
  4. Place in a double boiler and cook until thickened, stirring constantly.
  5. This may be served on toast if desired.
