Ingredients for Soup Of Herbs With Parmesan Recipe
- 1 handful chervil
- 1 handful chives
- 1 handful sorrel
- 1 head celery
- 1 sprig tarragon
- Several sprigs of parsley
- 3 pints of clear broth or stock
- French rolls
- Melted butter
- Grated parmesan

Instructions
- Wash and dry the herbs and celery and cut them in small pieces.
- Put the herbs in a saucepan and pour in the clear stock. Boil until the herbs and celery are tender.
- Slice some French rolls and cut them in small rounds the size of a half-dollar. Dip them in melted butter and roll them in finely grated parmesan until they are well covered.
- Put the parmesan-coated rounds in a shallow baking tin or cookie sheet and brown lightly in the oven.
- Pour the soup in the tureen and put the parmesan toast rounds on the top.
