Ingredients for Soup Bonne Femme Recipe
- 2 large heads of lettuce
- 1 pound sorrel
- 1 pound spinach
- 3 pints white stock
- 1/2 cup vegetable shortening
- 2 carrots
- 2 onions
- 2 tablespoons vegetable shortening
- 4 tablespoons flour
- 2 egg yolks
- 1 cup of boiling milk
- Salt and pepper to season with salt and pepper
Instructions
- Wash, dry, and cut up lettuce, sorrel, and spinach.
- Add white stock and simmer with vegetable shortening, carrots, and onions for 1 hour.
- Blend together vegetable shortening, flour, and yolks.
- Thin flour mixture with boiling milk and add to broth.
- Season with salt and pepper, press through sieve, and serve with croutons.
