Instructions
- Melt three tablespoons of butter, add one-fourth cup of flour, and pour on, gradually, while stirring constantly, two- thirds cup of milk.
- When the boiling point is reached, add one-half cup of grated Gruyere cheese, and the yolks of two eggs unbeaten.
- As soon as the cheese melts, remove from the range, fold in one cup of mild cheese, cut in very small cubes, and season with salt and cayenne.
- Spread in a shallow pan and cool, shape in round croquettes, dip in crumbs, egg and crumbs again, fry in deep fat and drain on brown paper.
