Ingredients for Soft-clam Chowder Recipe
- Quart of shucked soft shell clams
- 6 potatoes
- 1/4 pound salt pork, minced
- Sliced onion
- 1 can of chopped tomatoes
- 1 quart of cold water
- Salt and pepper to taste
- Optional: Thyme or other herbs
- Optional: crushed oyster crackers

Instructions
- Chop a quart of soft clams, set aside.
- Peel and slice 6 potatoes thin.
- Put the minced salt pork into a pot and fry crisp, then remove the pork and fry a small sliced onion in the pot to a light brown.
- Add the potatoes and the tomatoes, spices, cayenne pepper, and cold water.
- Simmer four hours.
- After cooking three and a half hours, add the clams. You may also add some crushed oyster crackers or saltines.
- Season to taste.
- Serve very hot.
- Scallops can be used instead of clams. Treated in the same way, they make a delicious chowder; add cayenne to season.
