Ingredients for Smothered Chicken Recipe

  • 2 small chickens or 1 large one, split
  • Salt and pepper
  • Flour
  • 2 or more tablespoons butter or other fat

Instructions

  1. Season chicken inside and out with salt and pepper, and dredge on all sides with flour.
  2. Lay the chicken, with the inside down, in a small baking tin and add a very little water.
  3. Cook slowly for one hour in a 325 degree oven, basting every 10 minutes after the first 20 minutes.
  4. When done, place the chicken on a hot platter, add enough water to make two cups gravy and thicken with two tablespoons flour.
  5. Season gravy with salt and pepper to taste, pour it over the chicken and serve at once.
