Ingredients for Simple Fruit Cake Recipe

  • ½ cup corn oil
  • ½ cup corn syrup
  • ¼ cup brown sugar
  • 3 eggs, beaten
  • 1/3 teaspoon salt
  • ½ cup milk
  • 1-¾ cups bread flour
  • ¼ cup Argo or Kingsford's Cornstarch
  • 1 teaspoon soda
  • 1 teaspoon cinnamon
  • ½ teaspoon each clove and allspice
  • 1/3 teaspoon nutmeg
  • ¾ cup halved, moist raisins
  • ¼ cup chopped, candied orange or grapefruit peel
  • ¾ cup moist currants
  • ½ cup finely sliced citron
  • ¼ cup chopped, candied pineapple (optional)

Instructions

  1. Pour the corn oil into a mixing bowl, add the corn syrup, sugar and eggs.
  2. Beat till very smooth, then add the milk.
  3. Sift together the flour, cornstarch, soda, salt and spices.
  4. Add the fruit, stirring till well coated.
  5. Stir into the first mixture and transfer to a good-sized round pan, or two brick-shaped pans oiled with corn oil and lined with smooth, thin paper.
  6. Cover and steam for an hour, then bake in a slow oven, 325 degrees Ffor a second hour.
  7. Keep two or three weeks before using.
