• 12 eggs, beaten
• 1 small egg plant, peeled and diced
• 3 tablespoons butter
• Flour
• Seasonings to taste

Instructions

1. Dredge the egg plant in flour.
2. Heat butter in frying pan. When foaming, add the egg plant.
