Ingredients for Scotch Woodcock Recipe

  • 6 hard cooked eggs
  • 2 tablespoons melted butter
  • 1/4 teaspoon salt
  • 1 pinch of paprika
  • 1/2 teaspoon anchovy essence or paste
  • 1 teaspoon cornstarch
  • 1 1/4 rich milk
  • Buttered toast

Instructions

  1. Shell and chop the whites of six hard cooked eggs very fine.
  2. Rub the yolks to a smooth paste with the butter, salt, paprika, anchovy essence, and cornstarch.
  3. Add milk and cook in a double boiler to a thick cream.
  4. Spread a layer of the yolk cream over each slice of toast and sprinkle with the chopped whites which have been kept warm over hot water.
  5. Pile on a hot platter, pour over the remainder of the sauce, and serve at once.
