Ingredients for Scotch Woodcock Recipe
- 6 hard cooked eggs
- 2 tablespoons melted butter
- 1/4 teaspoon salt
- 1 pinch of paprika
- 1/2 teaspoon anchovy essence or paste
- 1 teaspoon cornstarch
- 1 1/4 rich milk
- Buttered toast
Instructions
- Shell and chop the whites of six hard cooked eggs very fine.
- Rub the yolks to a smooth paste with the butter, salt, paprika, anchovy essence, and cornstarch.
- Add milk and cook in a double boiler to a thick cream.
- Spread a layer of the yolk cream over each slice of toast and sprinkle with the chopped whites which have been kept warm over hot water.
- Pile on a hot platter, pour over the remainder of the sauce, and serve at once.
