Ingredients for Scalloped Vegetable Oysters Italienne

  • 1-½ cups macaroni (raw)
  • 4 cups scraped and sliced salsify (oyster plant)

Instructions

  1. Break the macaroni into 1/2 inch lengths, cook in boiling salted water until well done and drain.
  2. Wash and scrape the salsify, slice thinly, and cook in boiling water, with salt to taste, until done, and the liquid mostly evaporated.
  3. Mix the macaroni and the cooked salsify.
  4. Add sufficient rich cream sauce or thick cream to season nicely, and pour into an oiled baking pan.
  5. Sprinkle with fresh crumbs, and press them down with a spoon, so they become moistened.
  6. Put small bits of vegetable butter over the top and bake to a nice brown.
