Ingredients for Scalloped Summer Squash No. 1

  • 2 cups cooked summer squash
  • 1 cup milk
  • 2 cups stale bread
  • 1 tablespoon vegetable butter
  • 1 egg
  • Salt

Instructions

  1. Cook the squash in salted water or steam until done, drain well, and mash.
  2. Trim off the brown crust from stale white bread and cut the white part into small dice.
  3. Beat the egg, add the milk and a little salt and pour over the bread, letting it soak 10 minutes.
  4. Add the squash and the butter to the soaked bread, mix lightly and pour into an oiled baking pan.
  5. Sprinkle a little cream or butter over the top and bake until thoroughly done and a nice brown.
